Cant get your kids to eat beetroot? Yes you can!

Tammy J. and prep H made these yummy little guys. Try it.

 

Beetroot and chocolate muffins (makes 12)

Ingredients

250g raw beetroot (I used half raw, half cooked)

175g plain flour

1tsp baking powder

2tbsp cocoa powder

2 free range eggs

¼ cup milk

60g softened butter

¼ cup sunflower oil

¼ cup caster sugar

½ cup soft brown sugar

100g best quality chocolate

Method

  1. Lightly grease a 12 hole muffin tin, or drop muffin cases into the holes
  2. Preheat oven 180°C
  3. Peel beetroot and grate in food processor with grating disc. Set aside
  4. Sift flour, baking powder and cocoa into a large mixing bowl
  5. Lightly whisk eggs with milk
  6. Using electric beater, mix butter oil and sugars until creamy
  7. Gradually add egg/milk mixture, alternately with flour mixture
  8. Tip into a large bowl and stir in beetroot, mix well
  9. Spoon into muffin pans
  10. Break up chocolate into 12 pieces and poke a piece into the top of each muffin
  11. Bake for 20-25 minutes until well risen and springy to the touch
  12. Cool in the tin for a few minutes and then transfer to a rack
  13. EAT and ENJOY!

You will need:

  • Patty pans (mini?)
  • Grater
  • Sieve
  • 3 mixing bowls
  • Whisk
  • Electric beater
  • Mixing spoons and normal spoons
  • Wire rack
  • Oven
